Big smiles and straight bow ties as director, Tommy from Melbourne hospitality collective; Tommy Collins announces the recent signing of the exciting, innovative and talented; EMILE AVRAMIDES as Executive Chef and MICHAEL FOX as Head Chef. The experienced pair, bring with them vast colourful careers, with years spent working around Australia and Europe.

With impressive resumes boasting prolific names such as; Jason Atherton, Raymond Blanc, Gordon Ramsay & Shannon Bennett, the driven duo are set to stamp their mark on the groups network or cafes (The Little Ox, Hawk & Hunter and Little Collins) their prepared meal offering (Small Batch) and catering firm, Tommy Collins.

Emile will continue his love affair with all things sourced locally and incorporate a sustainable ethos for the Tommy Collins kitchen in a vigorous attempt to reduce their footprint where his goal is to become a fully sustainable brand for the future. The Age 2011 Young Chef of The Year, Michael will work closely with Tommy to present menus of cultural mashups with esoteric ingredients to give the super-savvy Melbournian epicureans new eating and service experiences they crave.

So from now on nobody should leave the house without a pressed suit, little black dress and a case of champagne because you don’t know when these three, their Monsieur’s and Maître d’s will be at your next party.
